Keto Chocolate Chip Cookies                                                                           Makes 18 Cookies


1 Cup Almond Flour
1 Egg
1/2 Cup Unsalted Butter
5 Tablespoons Monk Fruit Sugar
1/2 Teaspoon Baking Powder
1/4 Teaspoon Xanthan Gum
1/4 Teaspoon Vanilla Extract
1/4 Teaspoon Salt
1/4 Cup Chopped Walnuts
1/4 Cup Coconut Flake
1/4 Cup Dark Chocolate Chips

Cream the butter and the sugar together in a mixing bowl. Add the egg and vanilla extract. In a separate bowl combine the almond flour, baking powder, xanthan gum, and salt. Pour the dry ingredients into the wet ingredients slowly and continue mixing. Once the ingredients are well combined add the coconut flake, chopped walnuts and chocolate chips. Scoop the batter onto a baking sheet pan covered with parchment paper. Evenly space the balls of dough so they don’t run into each other while baking. Chill the cookie dough in the freezer while the oven preheats to 375 degrees Fahrenheit. Bake the cookies for 20 minutes until they start to get golden brown around the edges. Allow the cookies time to cool and harden before eating them.
