Gluten-Free Pancakes                                                                          Makes 12 Pancakes

1/3 Cup Coconut Flour
1/3 Cup Potato Starch
1/3 Cup Green Banana Flour
3 Eggs
1 1/2 Cup Milk
3 Tablespoons Powdered Sugar
1 1/2 Teaspoon Baking Powder
1/2 Teaspoon Vanilla Extract

Whisk the milk and eggs together in a bowl. In a separate bowl combine the coconut, potato, and banana flour along with the baking powder and powdered sugar. Combine the dry ingredients into the wet ingredients and mix well. Add vanilla extract for flavoring. 
Preheat a non-stick pan and coat the pan in butter. Pour 1/3 cup of the batter into the hot pan, wait for the batter to bubble up, and then flip the crepe once it is golden brown. On medium heat the crepes should cook about 2 minutes on each side.
