Gluten Free Breadfruit Bread

Ingredients
5 Cups Breadfruit
1 Cup Coconut Flour
2 Eggs
1 Cup Water
1 Tablespoon Yeast
1 Tablespoon Sugar
1 Tablespoon Olive Oil
½ Tablespoon Salt

Boil a whole breadfruit until tender and then cool.  Peel the breadfruit and cut it into small pieces and begin mashing 5 cups of it in a large bowl.  A half a cup of warm water to help break down the pieces.  In a separate bowl combine the other half cup of warm water, yeast, and sugar, let the yeast rise for 15 minutes.  Add eggs, coconut flour, salt and olive oil to the breadfruit mash breaking up any large pieces.  Add the bloomed yeast to the breadfruit mash and mix until well incorporated.  Let the dough rise in a warm place for an hour.  Preheat the oven to 400 degrees Fahrenheit.  Form the dough into a ball and place it on a baking tray or in a loaf pan.  Bake for 45 minutes to 1 hour depending on how firm you prefer your bread. 


Breadfruit Bread II

Ingredients

1 Cup Bread Flour
1 Cup Breadfruit
1/3 Cup Water
1 Tablespoon Garlic
1 Teaspoon Sugar
½ Teaspoon Yeast
½ Teaspoon Salt
¼ Teaspoon Herb de Provence. 
+ 1 Tablespoon Olive Oil

Boil a whole breadfruit until tender.  Peel and dice the bread fruit into small pieces.  Measure one cup of bread fruit and cut it further into small dice.  Set a sauté pan on high heat, add oil then cook the bread fruit pieces and minced garlic until golden brown.  In a small bowl combine warm water, sugar and yeast.  Let the yeast rise for 15 minutes.  In a separate bowl combine the flour with the salt then add it to the wet ingredients.  Combine the dough until incorporated.  Let the dough rise in a warm place for an hour and then add the cooked bread fruit and garlic.  Add the Herb de Provence and form the dough into a loaf.  Oil the loaf with the extra olive oil.  Preheat the oven to 450 degrees Fahrenheit.   Bake the loaf for 20 minutes until golden brown on top.
