1747 American Wedding Cake


1 Cup Whole Wheat Flour

1/2 Cup Cherries

1/2 Cup Sugar 

2 Eggs

2 Tablespoon Butter

2 Tablespoon Chopped Almonds

1 Whole Orange- Segments 

1/2 Tablespoon Sherry

1/2 Tablespoon Brandy

1 Teaspoon Cinnamon Ground

1/4 Teasponn Nutmeg Ground

1/4 Teaspoon Clove Ground

In a large bowl beat the sugar into the butter.  Beat the eggs until frothy in a separate bowl before adding to the butter and sugar.  Then add the sherry, brandy and chopped almonds.  In a separate bowl combine flour, cinnamon, nutmeg, and clove.  Add the dry ingredients to the wet ingredients gently folding the batter just until incorporated.  Preheat the oven to 350 degrees Fahrenheit.  Allow the dried cherries to warm up in the oven for 5 minutes.  Pour the batter into a greased 7 inch round cake pan.  Add the warm cherries to the batter and bake for 35 minutes or until done.   Once the cake has cooled prepare a butter cream with powdered sugar, milk, and butter then spread it over the cake top.
